Marieke Holy Trinity Gouda Mac n' Cheese

  • 1 box (16 oz) penne noodles
  • 1.5 lbs Marieke Gouda Holy Trinity cheese, shredded
  • 4 tbsp butter
  • 1 pint (2 cups) heavy cream
  • Salt and pepper to taste

Note: Double the recipe for a full crockpot.


  1. Prepare Penne Noodles:
    • Bring a large pot of water to a boil.
    • Add the penne noodles and cook until they are half cooked, about 5-6 minutes.
    • Drain the noodles and set them aside to cool.
  2. Prepare Cheese Sauce:
    • In a saucepan over medium heat, melt the butter.
    • Once the butter is melted, pour in the heavy cream and bring it to a low boil, stirring continuously.
    • Gradually add in ¾ of the shredded Gouda cheese while whisking until the cheese is fully melted and the sauce is smooth.
    • Turn off the heat and allow the sauce to settle.
  3. Combine Noodles and Sauce in Crockpot:
    • Once the noodles have cooled and the sauce has settled, transfer the noodles to the crockpot.
    • Pour the cheese sauce over the noodles in the crockpot and stir until the noodles are evenly coated with the sauce.
  4. Cook in Crockpot:
    • Set the crockpot to "warm" setting and let the pasta cook for up to 4 hours, stirring occasionally to prevent sticking.
  5. Serve:
    • Just before serving, sprinkle the remaining shredded Gouda cheese over the top for an extra cheesy finish.
    • Serve hot and enjoy the ooey-gooey goodness!
