Zucchini Marieke® Gouda Flowers

Ingredients (serves 6):

 

  •  2 medium zucchini, thinly sliced

  • 1/4 teaspoon pepper

  • 1 teaspoon salt

  • 1/2 teaspoon basil

  • 1/2 teaspoon oregano

  • 1 teaspoon lemon zest

  • 1 teaspoon chili powder

 

 

  • 2 tablespoons extra virgin olive oil

  • 4 eggs

  • 1/3 cup milk

  • 1 garlic clove, pressed

  • 6 ounces Marieke® Gouda Pesto Basil, shredded

Directions:

 

  1. Preheat oven to 400. Prepare your muffin tin by spraying it with non stick cooking spray. Set aside.

  2. Combine pepper, salt, basil, oregano, chili powder, and lemon zest in medium bowl stir in extra virgin olive oil. Gentle toss the thinly sliced zucchini to coat with the spices and olive oil.

  3. Take your zucchini and line each muffin cup with 3 or 4 slices making a rose lining.

  4. In a separate bowl whisk together eggs, milk, and garlic. Evenly distribute the egg mixture between all the muffin cups in your pan.

  5. Top each zucchini flower with about 1 tablespoon of Marieke® Pesto Basil Gouda.

  6. Bake for 20 minutes or until the cheese starts to turn golden brown. Remove from oven and let cool in muffin pan for 5 minutes. Gently remove from pan with a large serving spoon. Serve hot as a pretty side dish. Enjoy!
