Ultimate Marieke® Gouda Chicken

Ingredients (serves 4):

 

  • 2 tablespoons extra virgin olive oil

  • 2 tablespoons lemon juice

  • 1 tablespoon honey

  • 2 garlic cloves, pressed

  • 1/2 teaspoon kosher salt

  • 1/2 teaspoon pepper

  • 4 skinless, boneless chicken breast halves

 

 

  • 12 fresh asparagus spears, 3 inches in length

  • 2 cups Marieke® Gouda Onion Garlic, shredded

  • 8 slices bacon, partially cooked

Directions:

  1. In small bowl, combine olive oil, lemon juice, honey, garlic, salt, and pepper. Place chicken in large zip lock bag and add olive oil mixture; toss to coat. Refrigerate for 2 hours.

  2. Heat grill. When grill is hot, remove chicken from marinade. Discard marinade and place chicken on hot grill. Grill chicken on each side until good grill marks form and exterior of chicken is no longer pink.

  3. Transfer chicken to a greased 11 x 7 inch baking dish. Top each chicken breast with 3 asparagus spears, 1/2 cup Marieke® Onion Garlic Gouda, and 2 slices of bacon.

  4. Bake, uncovered for 20-25 minutes or until internal temperature reaches 170. Let rest 5 minutes before serving. Enjoy!
