Stuffed Sweet Potatoes

Ingredients (serves 6):

  • 3 medium size sweet potatoes, cleaned

  • 1 tablespoon extra virgin olive oil

  • salt & pepper

  • ¼ pound ground pork, browned and crumbled

  • 1 tablespoon maple syrup

  • 1 ½ cups Marieke’s Cranberry Gouda, shredded


  1. Pierce each sweet potato once with a knife and place all in microwave for 5 minutes. Turn over each potato and continue to cook until tender.

  2. Preheat broiler. Cut each potato in half-length wise and let cool slightly. Carefully scoop out most of the sweet potato leaving a ½ inch lining for each in the skin. Place sweet potato filling in a medium sized bowl, season with salt and pepper to taste, add maple syrup, cooked pork, and ½ cup Marieke’s Cranberry Gouda; mix until combined. Place skins on a baking sheet, brush inside of each potato skin with extra virgin olive oil and broil for five minutes.

  3. Divide the filling among the six sweet potato skins and top each with the remaining Marieke’s Cranberry Gouda. Broil for an additional 1 - 2 minutes until cheese melts and starts to turn golden brown. Enjoy!
