Marieke's Shrimp Fajitas

Ingredients (serves 4):


  • 1 pound shrimp; peeled, deveined, tails removed

  • ¼ teaspoon sugar

  • 2 tablespoons extra virgin olive oil

  • salt & pepper

  • ½ cup red bell pepper, sliced into thin strips

  • ½ cup green bell pepper, sliced into thin strips

  • ½ cup onion, sliced into thin strips

  • ¼ of a fresh pineapple, cut in small chunks

  • 8 small size flour tortillas, warmed

  • 1 cup Marieke’s Jalapeño Gouda, finely shredded



  1. Heat extra virgin olive oil in a large skillet over medium high heat. Pat shrimp dry with paper towel and toss in a bowl with sugar to coat. Add shrimp to hot pan and season with salt and pepper sauté 3-5 minute on both sides just until shrimp is starting to turn pink. Remove shrimp from pan and set aside.

  2. Add peppers, onions, and pineapple to pan and sauté until tender. Return shrimp to pan and continue to cook until shrimp is cooked all the way through.

  3. To serve, place 2 tablespoons of Marieke’s Jalapeño Gouda on each warmed tortilla and top with shrimp mixture. Serve with fresh cilantro and limes. Enjoy!
