Marieke® Gouda Tomato Basil Pasta

Ingredients (serves 4):


  •  4 ounces bacon, cooked and finely chopped

  • 2 pints grape tomatoes

  • 2 cloves garlic, minced or pressed

  • 2 tablespoons extra virgin olive oil

  • 1 pound cavatappi or penne pasta

  • 1 1/2 cups 12-18 month Marieke® Gouda, finely shredded

  • 2/3 cup chopped fresh basil



  1. In a large bowl toss tomatoes, garlic, and extra virgin olive oil together to coat. Spray grill basket with non stick cooking spray and preheat on a hot grill. With grill on medium heat add tomato mixture to the grill basket. Let grill for 1 to 2 minutes without stirring. Gently stir tomatoes and continue to grill until tomatoes start to burst. Remove from grill and put back in large bowl. Using a potato masher carefully mash tomatoes.

  2. Bring 4 quarts water to boil in large pot. Add 1 tablespoon salt and pasta to boiling water and cook until just beginning to soften, about 8 minutes. Reserve 1/3 cup cooking water, drain pasta and return to large pot. Add crushed tomatoes, Marieke® Gouda, fresh basil, and reserved cooking water to pasta and toss to combine. Season with salt and pepper to taste. Sprinkle portions with crispy bacon. Serve. Enjoy!
