Marieke® Gouda Style Salmon

Ingredients (serves 4):


  • 1 11/2 to 2 pound skin on salmon fillet, about 1 inch thick at the thickest part

  • seasoning salt

  • 4 tablespoons real mayonnaise

  • 1 cup 4-6 month Marieke® Gouda, finely shredded

  • 1 cup 12-18 month Marieke® Gouda, finely shredded



  1. Cut salmon into four equal parts. Place Salmon fillets one at a time on a brown paper bag, skin side down. Cut paper bag out around fillets as close as you can get to each fillet. Combine cheeses together in a medium sized bowl, set aside.

  2. Season each fillet with your favorite seasoning salt. Spread 1 tablespoon of Mayonnaise on each fillet.

  3. Place fillets on the top rack of your hot grill on medium heat. Grill fillets for 10 ñ 15 minutes or until fillets flake with a fork and internal temperature reads 140 degrees. The brown bag will char around the edges. Top each fillet with 1/2 cup Marieke® Gouda, grill until cheese is melted.

  4. Remove fillets from the grill and carefully peel the paper bag off of each fillet. The skin should come off nicely with the paper. Serve immediately. Enjoy!
