Marieke Gouda Stromboli

Ingredients (serves 6-8):

 

Dough:                   

  • ¼ cup sugar

  • ¾ teaspoon salt

  • 3 cups + 1 tablespoon all purpose flour

  • 2 tablespoons gluten (or use high gluten/bread flour in place of all purpose flour)

  • ¼ cup whole wheat flour

  • 1 ¼ teaspoon active dry yeast

  • 1 ¼ cup milk, warmed

  • 1 egg, beaten

  • 2 tablespoons butter

Time saving tip: substitute frozen bread or pizza dough, thawed for dough recipe)

 

Filling:

  • ¼ cup mayonnaise

  • ¼ teaspoon Italian seasoning

  • 6 ounces deli ham, thinly sliced

  • 2 cups Marieke’s Mustard Mélange Gouda, shredded

 

Topping:

  • 1 egg, beaten

  • ¼ cup Marieke’s 12-18 Month Gouda, shredded

Directions:

  1. For Dough: Combine sugar, salt, flour, gluten, whole wheat flour, and yeast in a stand mixer with a dough hook attachment. While mixer is on low speed add remaining dough ingredients, continue mixing/kneading on low speed for four minutes longer. Spray a bowl with cooking spray, place dough in bowl and turn so both sides will be covered with cooking spray, let rise for 30 minutes. Preheat oven to 350.

  2. While the dough is rising, prepare the filling. Combine mayonnaise and Italian seasoning together in a small bowl. Set aside.

  3. After dough is done rising place on a lightly floured surface, using a rolling pin roll into a 14”x19” rectangle. Spread dough with mayonnaise mixer. Lay ham slices overlapping slightly, leaving a 1/2 inch border around all sides. Top with shredded Marieke’s Mustard Mélange Gouda evenly over ham.

  4. Moisten edges of dough with water. Starting at one of the long sides, fold one third over filling, then repeat with other long side. Firmly pinch edges of dough together to seal. Place seam side down, on lightly greased baking sheet.

  5. Cut 4 diagonal slits on top of dough with serrated knife.  Brush egg evenly over top of dough.

  6. Bake 35-40 minutes or until golden brown. Remove from oven and top with shredded Marieke’s 12-18 Month Gouda.

  7. Let cool for 10 minutes before slicing. Enjoy!
