Marieke® Gouda Smoked Scrambled Eggs

Recipe by Gouda Chef ®Molly Schraufnagel

Ingredients (serves 4-6):

  • 8 large eggs

  • 1/4 cup milk

  • 1/4 teaspoon salt

  • pepper to taste

  • 1 tablespoon butter

  • 1/4 cup apple, shredded on the medium holes of a box grader

  • 1/4 cup ham, cut into small cubes

  • 1 1/2 cups Marieke® Gouda Smoked, shredded

  1. Whisk the eggs, milk, salt and pepper together in a medium bowl until light yellow.

  2. Melt butter in a 10-inch nonstick skillet over medium high heat, coat entire pan. Add shredded apple and ham, cook about 1 minute or until the apple starts to softened.

  3. Add the eggs and 1 cup of Marieke® Smoked Gouda to the skillet; using a rubber spatula, cook while constantly scraping along the bottom and sides of the skillet as the eggs form curds. Turn heat to low and continue to cook while scraping the pan until large clumps form that are shiny and wet. Turn off the heat, and top with remaining Marieke® Smoked Gouda. Serve. Enjoy!
