Marieke® Gouda Gnocchi Soup

Ingredients (serves 8-10):

 

  • 2 tablespoons butter

  • 1/2 cup onion, finely chopped

  • 1/2 cup carrots, diced

  • 3 garlic cloves, pressed

  • 6-8 fresh mushrooms, sliced

  • 6 cups water

  • 1/2 teaspoon basil, thyme & parsley

  • 2 tablespoons chicken bouillon granules

  • 2 teaspoons salt

 

 

  • 1/2 teaspoon white pepper

  • 3 oz. fresh spinach, chopped

  • 2 cups cooked chicken or turkey

  • 1-17.6 oz. package potato gnocchi

  • 1 teaspoon beef bouillon granules

  • 4 tablespoons butter

  • 4 tablespoons flour

  • 2 cups milk

  • 2 cups Marieke® Gouda Pesto Basil, finely shredded

Directions:

 

  1. Sauté onions, carrots, garlic, and mushrooms in 2 tablespoons of butter in a stock pot until soft. Add water, basil, thyme, and parsley to the vegetable mixture, bring to a low boil. Gently stir in spinach, chicken bouillon, salt, white pepper, chicken, gnocchi, and beef bouillon bring back to a gentle boil for 5 minutes or until the gnocchi starts to float to the top.

  2. In a separate saucepan, melt 4 tablespoons of butter over medium low hear. Whish in flour stirring constantly until thickens, creating a roux. Slowly whisk in milk, stirring constantly. Continue stirring over medium low heat until thick, 5 to 6 minutes.

  3. Stir the milk mixture and Marieke® Gouda Pesto Basil into the stock pot, cooking soup until heated through and cheese is melted. Serve immediately, garnishing with more shredded Pesto Basil Gouda. Enjoy!
