Marieke® Gouda Bread Salad

Ingredients (serves 6):


  • 1 loaf Italian bread, cut into 1 inch cubes

  • 1 medium cucumber

  • 4 large tomatoes, cut into 1 inch cubes

  • 1/4 cup packed fresh basil, chopped

  • 1 medium red onion, thinly sliced

  • 4 ounces salami, cut into strips

  • 1/2 cup olives

  • 6 ounces Marieke® Gouda Young (2-4 month), cut into 1/4 inch cubes




  • 1/3 cup extra virgin olive oil

  • 1/2 cup red wine vinegar

  • 1 teaspoon garlic powder

  • 1 teaspoon oregano

  • 1 teaspoon basil

  • 1/4 teaspoon pepper

  • 1/2 teaspoon salt

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon dijon mustard



  1. Preheat oven to 400 degrees. Spread bread cubes on baking sheet and toast in oven for 10 minutes or until bread is crisp and browned. Set aside.

  2. Thinly slice cucumbers, (I like to use a vegetable peeler). Combine cucumbers, tomatoes, basil, red onion, salami, olives, and Marieke® Gouda in a large bowl.

  3. Prepare dressing by whisking all the ingredients together in a medium sized bowl. Drizzle over the vegetables in the large bowl, gently toss to coat. Right before serving stir in dried bread cubes. Enjoy!
