Marieke® Gouda After Thanksgiving Turkey Sandwich

Ingredients (serves 4):


  • 1 tablespoon butter

  • 1/2 cup onion, finely chopped

  • 1 garlic clove, pressed

  • 5-6 fresh mushrooms, sliced

  • 8 tablespoons butter

  • 8 slices sourdough or country bread

  • 1/2 cup whole berry cranberry sauce

  • 8 ounces leftover turkey, sliced or cubed

  • 8 ounces Marieke® Gouda Mustard Mélange, shredded



  1. Melt 1 tablespoon of butter in a medium skillet; add onions, garlic, and mushrooms, sauté until soft and garlic is fragrant. Remove from heat and set aside.

  2. For each sandwich, lay two slices of bread on your work surface. Spread 2 tablespoons of cranberry sauce on one slice of bread; top with 2 ounces of turkey, about 1 1/2 tablespoons of onion mixture, and 2 ounces of Marieke® Mustard Mélange Gouda. Top with the other slice of bread. Repeat with remaining ingredients to make four sandwiches.

  3. Butter the top of the sandwich; heat a nonstick skillet over medium heat. Carefully put the sandwich, butter side down into the pan. Cook until bread is golden and crisp and cheese is beginning to melt, about 6 minutes, pressing down some with your spatula. Butter the now top of the sandwich. Carefully flip the sandwich and continue to cook until bread is golden and crisp and sandwich is heated through and cheese is melted, about 4 minutes more. Remove from pan and cover to keep warm, continue cooking the rest of the sandwiches.

  4. Serve hot sliced in half. Enjoy!
