Grilled Veggie Sandwich

Ingredients (serves 4):



  • ½ cup extra virgin olive oil

  • 1 tablespoon white wine vinegar or balsamic vinegar

  • 2 teaspoons sugar

  • 1 teaspoon salt

  • 1 garlic clove, pressed

  • ¼ teaspoon onion powder





  • 4 ounces fresh mushrooms

  • 2 small zucchinis

  • 1 red bell pepper

  • ½ large red onion

2 tablespoons mayonnaise

1 garlic clove, pressed

1 cup Marieke’s Pesto Basil Gouda, shredded

8 slices rustic bread



  1. Combine all marinate ingredients in medium bowl. Cut up all vegetables into ½ inch pieces and toss with marinate. Marinate covered in refrigerate for 30 minutes.

  2. Prepare grill pan with cooking spray and preheat on hot grill. Reduce grill temperature and add vegetables to hot grill basket, let vegetables grill without stirring for first 3-4 minutes. Stir and continue grilling vegetables until tender. Remove from grill.

  3. Combine mayonnaise with garlic in small bowl. Spread each piece of bread with garlic mayonnaise; for sandwiches top with ¼ of the vegetable mixture and ¼ cup shredded Marieke’s Pesto Basil Gouda, repeat for each sandwich. Grill on panini press until cheese is melted. Let rest 2 minutes before slicing.
