Marieke Gouda Chicken Pizza

Ingredients (serves 6):

  • 1 pound store bought pizza dough or favorite homemade

  • 1 tablespoon extra-virgin olive oil

  • 1 garlic clove, pressed

  • ½ cup barbeque sauce

  • 2 cups cooked chicken, cubed

  • 1 small red onion, thinly sliced

  • 3 cups Marieke’s 2-4 month Gouda (about 12 ounces), shredded

  • ¾ cup fresh pineapple, chopped

  • cilantro, optional garnish


  1. Pre-heat oven to 425 degrees. Grease cookie sheet, press and roll dough into 15 x 12 inch rectangle. Transfer dough to prepared cookie sheet. Combine extra-virgin olive oil and garlic, brush over entire dough. Bake dough 5 minutes. 

  2. Remove crust from oven and spread barbeque sauce over crust. Sprinkle chicken and onion evenly over crust. Sprinkle Marieke’s Gouda over pizza, leaving ½ inch border. Top pizza with fresh pineapple. Return pizza to oven and bake 15-20 minutes until cheese starts to lightly brown. 

  3. Transfer pizza to a wire rack and let cool for 5 minutes. Sprinkle with cilantro, slice and serve. Enjoy!
