Pounded Cheese Spread

Recipe by Gouda Chef ®Molly Schraufnagel

Ingredients (serves 4):

 

  • 2 cups Marieke’s Gouda 12-18 month, finely shredded

  • ¼ cup butter, still cool

Directions:

 

  1. Cut butter up into small cubes and place in a food processor, add Marieke’s Gouda.

  2. Start by pulsing in the food processor until the butter and cheese starts to come together.

  3. Run food processor on medium speed until the mixture is smooth, you will need to stop periodically and scrape down the sides.

  4. Serve at room temperature as a spread over bread or crackers.
