Breakfast Strata with Marieke® Gouda Smoked

Ingredients (serves 6):

 

  • 10 slices Italian or French bread

  • 2 tablespoons butter

  • 1/2 cup onion, chopped

  • 1/2 cup red bell pepper, chopped

  • 2 garlic cloves, pressed

  • 5 fresh mushrooms, sliced

  • 1 can (14-oz.) artichoke hearts, drained and coarsely chopped

  • 2 cups fresh spinach or 1 (10-oz.) package frozen chopped spinach, thawed and squeezed dry

 

 

  • 6 large eggs

  • 2 1/2 cups milk

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 2 cups Marieke® Gouda Smoked, shredded

Directions:

 

  1. Let bread sit out for at least 4 hours or lightly toast in toaster.  Set aside.

  2. Heat butter over medium heat in a medium sized skillet. Add the onions, bell peppers, and garlic and cook for about 4 minutes. Add mushrooms and continue to cook until tender and moisture is out of the mushrooms. Stir in artichoke hearts and chopped spinach; stir until spinach starts to wilt. Remove from heat and set aside.

  3. Spray a 9 x 13 inch pan with cooking spray. Arrange half of the bread slices, in a single layer in the pan. Sprinkle half of the vegetable mixture, then 1 cup shredded Marieke® Smoked Gouda cheese, evenly over the bread slices. Arrange the remaining bread slices in a single layer over the cheese; sprinkle the remaining vegetable mixture evenly over the bread.  

  4. Whisk the eggs in a medium bowl; whisk in milk, salt, and pepper. Pour the egg mixture evenly over the bread layers. Cover and refrigerate overnight or at least 4 hours.

  5. Remove the pan from the refrigerator and let stand at room temperature for 20 minutes. Adjust an oven rack to the middle position and heat the oven to 350 degrees. Bake covered with aluminum foil for 30 minutes; uncover, bake an additional 20 minutes or until the center is puffed and the edges are pulling away from the sides of the dish. Top with 1 cup shredded Marieke® Smoked Gouda cheese and return to the oven for another 5 minutes or until cheese is melted. Cool on a wire rack for 5 minutes and serve. Enjoy!
