Marieke Golden Asparagus Soup

Ingredients (serves 4):

  • 1 medium onion, chopped

  • 1.5 lbs fresh asparagus, cut into 1 inch pieces

  • 1 garlic clove, pressed

  • 2 cups chicken stock

  • pinch ground chipotle pepper

  • 1/2 cup heavy cream

  • salt and pepper

  • 1/2 baguette loaf, cut in 1 inch slices

  • 2 cups Marieke Golden cheese, shredded

  • crumbled bacon and fresh cilantro, optional


  1. Sauté onions in medium sized stock pot, add asparagus, and garlic stirring constantly until fragrant. Slowly add chicken stock and simmer for 8-10 minutes until asparagus is tender. Reduce heat to low and stir in cream, chipotle, and 1 cup Marieke Golden Cheese. Carefully transfer soup to blender. Remove vent from blender cover and cover with clean dish towel to allow steam to escape, blend soup until smooth. Return soup to pot on low temperature. Season with salt and pepper adding more chipotle pepper to taste.  

  2. Preheat broiler, place baguette slices on baking sheet broil in oven flipping half way through to toast both sides of bread.  Top each with 2 tablespoons Marieke Golden Cheese return to oven until cheese is melted.  

  3. Ladle hot soup into bowls, top with 1 tablespoon Marieke Golden shredded cheese, bacon, and fresh cilantro. Serve with Marieke Golden toast. Enjoy!
